Bragg organic, raw apple cider vinegar is unfiltered, unheated, unpasted and has 5% acid. The wine contains the "mother" of the production (yeast) which is unique in today's apple cider vinegar. The "mother" can only be found in raw, unfiltered apple cider vinegar.
The term "mother" is less easy to explain, but it appears as a dark cloudiness in the vineyard. There are string-like protein molecules, enzymes and minerals that ordinary Apple cider vinegar does not have due to.
It is subjected to processing. It is the "mother" who forms the healthy part of apple cider vinegar. It works in a similar way to the sourdough culture of sourdough.
